BANGA STEW (Ofe akwu)


BANGA STEW (Ofe akwu) 




            Banga stew is one stew i enjoy so much, the natural taste is inviting!!!



INGREDIENTS

 Fish (Can use any meat of your choice)
1 medium sized basin of Banga
1 cup Crayfish
 Fresh pepper
1 Onion
2 Seasoning cubes
Salt
1 Green pepper (optional )
1 Bunch Scent leaves
1 Medium sized Ugu leave















COOKING METHOD FOR BANGA STEW


  1. Boil banga for about 30 to 45 minutes. Pound, extract it and set aside.
  2. Season your fish (meat) with salt, onion, seasoning cube and fresh pepper cook, fry and set aside.
  3. Wash and cut your scent leave, ugu leave and green pepper set aside.
  4. Cut your onion, pound your fresh pepper and crayfish set aside ( you can also grind them)
  5. Set the pot of banga extract on fire and start cooking for about 30 to 45 minutes or more till it thickens you will notice some red oil at the surface.
  6. Add your cooked fish, crayfish, onion, fresh pepper, seasoning cubes and salt. Cover to cook for about 10 to 15 minutes.
  7. Add your scent leaves, ugu and green pepper to simmer for just 2 minutes and bring down.
  8. Banga stew is ready. Can be served with White rice, white beans, boiled yam.

HOW TO PREPARE VEGETABLE SOUP



Vegetable Soup


Africans love soup and vegetable soup is quite special. The freshness is inviting.
Tastes superb!


INGREDIENTS
  1. Meat 
  2. Stock fish (optional)
  3. Dried fish
  4. Red oil
  5. Waterleaf
  6. Pumpkin leaves (ugu)
  7. Seasoning cube
  8. Salt 
  9. Crayfish
  10. Dried Pepper
     


    DIRECTIONS

    PREPARING THE MEAT AND FISH

    For soup you can use any type of meat like goat meat, beef, roundabout, cow or goat intestine (sharki).

    STEP 1
    Soak your dried fish and stock fish in hot water for 15 minutes.

    STEP 2
    Remove the bones  from the dried fish and stock fish. Wash and set aside.

    STEP 3
    Wash your meat thoroughly with water and in a medium sized pot,  add your washed stock fish and dried fish. Add two (2) seasoning cubes, one (1) tea spoon of salt, a cup of water then leave to cook for about 15 minutes or more. Turn off the burner and set aside. 

    PREPARING THE VEGETABLES

    Thoroughly wash your waterleaf and pumpkin leaves (ugu), slice and set aside.


    THE MAIN SOUP PREPARATION 

    Turn on your burner and put your cooked meat on fire, allow to cook for another 5 minutes. Add your dried pepper, seasoning cube, salt and and cray fish cover and allow to cook for about 15 mins, add your red oil cover allow to cook for 5 min open and check the taste if more salt is needed you add. Add your waterleaf cover allow to cook for 5 mins open and turn, add your pumpkin leave (ugu).
    Your pot of vegetable soup is ready can be served with eba, fufu, semovita, wet and pounded yam

COOKING PROCEDURE FOR FRIED VEGETABLES
  1. In an empty pot on fire add vegetable oil allow for about 3 minutes add your chop vegetable stir for 2 minutes and remove from the oil
  2. In that hot oil add your chop onions and stir for 3minutes
  3. Add you chop tomatoes and pepper stir for about 3minutes
  4. Add your grounded crayfish, seasoning cube and salt and stir for 5minutes
  5. Add your pumpkin leave allow for just 2minutes then bring down
  6. And mix your fried vegetables inside
  7. Food is ready

INGREDIENTS
Spaghetti
Goat Meat
Vegetable oil
Onions
Crayfish
Seasoning Cube
Green beans
Green pepper
Carrot
Fresh tomatoes
Fresh pepper
Salt





 
Goat Meat spiced with fresh pepper,
onions, seasoning cube and salt ready to put on fire

                                   COOKING METHOD FOR THIS SPAGHETTI :

                                    fry your onions, fresh pepper and fresh tomatoes in oil and stir

                                    add crayfish, seasoning cube and salt

                                    add water

                                   add your spaghetti and boiled goat meat cover to cook over low heat

                                  when the water is almost dry you add your green pepper and green beans

                                   add carrot

UKAZI SOUP


Ukazi Soup




INGREDIENTS

Meat.
Dry Fish.
Stock Fish.
Cocoa Yam.
Red Oil.
Ukazi Leaves (Called Afang in Efik and Ibibio )
Ogiri (Iru) (Dawadawa)
Ashanti Pepper (Uziza seed)
Cray Fish.
Dry Pepper.
Seasoning Cube.
Salt.


Meat(Cow tail)

Dry Fish

Stock Fish



METHOD

1. Wash your Cocoa Yam then set aside.



2. Wash your meat and Stock Fish then set aside.



3. Salt your fish and soak in hot water for about 15 minutes.

4. Pound your Ashanti Pepper (Uziza seed).


5. Boil your Cocoa Yam for about 30 minutes and pound.
Tip: Pound your Cocoa Yam immediately after boiling because if it gets cold it becomes more difficult to pound.




PREPARATION

1. Boil your washed meat, stock fish and dry fish with seasoning cube, salt and pepper for about 20 minutes.


2. Add the quantity of water you want for the soup to the boiled meat and allow to boil for about 15 minutes.

3. Add your red oil to the pot of boiled meat, cover the pot and allow to boil for another 10 minutes.



4. Add your Ashanti Pepper (Uziza seed), Crayfish, Dry pepper and Seasoning cube and Salt.  Allow to cook for 15 minutes.

5. Add your pounded Cocoa Yam then stir till the Cocoa Yam dissolves.



6. Add your Ukazi Leaves (Afang Leaves)



FOOD IS READY !!!!!!!

Can be Serve with Pounded Yam, Garri, Fufu, Semovita,
